So yesterday I looked across the table at work where my mom works. I said "mom, what do you think about a "churro" cupcake?" I saw that look in her eye and I knew the wheels were turning. Today my friends...THE CHURRO CUPCAKE! Vanilla sponge cake with cinnamon and sugar, filled with cinnamon and sugar mousse topped with this same mousse and deep fried cinnamon and sugar tortilla strips. Amazing! Thanks MOM!
